Oh myyy these rainbow vegetable rice paper rolls are too good! Invite your friends round and get stuck in making these fresh and delicious rolls. They make the perfect lunch in the sun and are also great for a light dinner. If you’re lucky to have any left over, they make a great lunch the next day!

Mix the dressing ingredients together.
Place some warm water in a large bowl. Dip a rice paper roll into it place on a chopping board and pat dry. Place a little bit of the lettuce in the middle towards the bottom of the rice paper roll (allow an inch below it), top with a few slices of avocado, carrots, mango, cucumber, a tsp of cashew nuts and a mint leaf.
Ok let’s start rolling. Roll the bottom flap over the filling and start rolling tightly upwards. Once you get half way, fold the two sides inwards. Dip your fingers in warm to help fix them in place then roll all the way to the top. Continue this with all of them.
Slice in half and enjoy dipped in the turmeric dressing.
