My quinoa, feta and red onion salad is such a quick and easy, but totally delicious salad. I love the salty and creamy feta with the sweet raisins. The quinoa will keep you feeling fuller for longer so you won’t be reaching for the afternoon snack as quickly.
It’s the perfect lunchbox salad you can whip up at the beginning of the week. Lunch = sorted!
Heat the oil in a frying pan and add the onions, cumin, coriander and a pinch of sea salt, sauté for 10 minutes until golden.
While this is cooking, rinse the quinoa, then place it with 250ml of water and a pinch of salt, bring to the boil then reduce to a simmer and cook for 12 minutes until cooked through. Stir through the olive oil and another pinch of salt.
Mix the quinoa and cooked red onions with the rest of the ingredients and serve.
