More pumpkin recipes! These little treats are a great one to whip up.
The blueberry coulis is totally sugar free and can be used as a jam as well! Blueberries are a great super food and although taste sweet are very low in sugar!
I have used stevia to sweeten these babies. Stevia is a natural sweetener, it is super sweet, it is 200 times sweeter than sugar so please be gentle with it.
Cut up ½ a small pumpkin and steam the flesh for 20 minutes.
Preheat the oven to 180. Mix the dry ingredients (buckwheat flour, baking soda, baking powder, cloves, cinnamon, nutmeg, salt).
In a separate bowl, mix the wet ingredients (pumpkin, coconut oil, honey and eggs).
Combine the dry and wet ingredients in a food processor, blitz until combined.
Grease 16 muffin or cupcake tine, Fill each almost to the top with a scoop of batter
Bake for 20 minutes
While cooking place your berries in a pot with 3tbsp of water, add stevia and bring to almost boil then reduce to simmer, let simmer for 10 minutes until a thick sauce occurs.
Serve blueberry coulis with muffins!
Tip: Add a little yogurt or coconut yogurt
