Prawn Soba Noodle Bowl

This Prawn Soba Noodle Bowl is one of my favourite quick and easy lunches that’s packed full of flavour as well as loads of protein from the prawns and edamame to keep you going till dinner.

It’s the perfect dish to customise and use up whatever veggies you have in the fridge and takes just 15 minutes start to finish.


Serves 2 Ready in 15 minutes Good For

Directions

Cook the noodles as per pack instructions and rinse with cold water to stop them from sticking to one another before placing in a bowl.
Mix the marinade ingredients together and toss the prawns with the marinade, heat a pan to a high heat and fry until pink, take out the pan and throw in the edamame for a minute.
Chop up the cucumber and place on top of the noodles with the edamame and prawns
Mix the tahini dressing together and drizzle over the noodle bowl
