Prawn and Pepper Courgette Stir Fry

I love a stir fry. It’s done in under 10 mins and hits the spot, bursting with flavours of spicy goodness.

You might be interested to know that red peppers actually contain more vitamin C than oranges, so you can bet this dish will be firing up your immune system! Prawns are high in protein which means you will stay fuller for longer, and they’re low in fat! Make sure you buy your fish from a sustainable fishmonger.


1. Spiralize or julienne peel the courgette into noodle shapes and leave to the side.

2. Heat a pan up to a medium heat with the oil, chop up the spring onion and throw them in for a few minutes until golden brown.

3. Finely slice the pepper and add them in stirring for 2 minutes, then throw in the ginger, chilli and garlic.

4. Stir fry for 5 minutes then throw in the courgette and prawns and cook for 3 minutes until they are cooked through. Serve immediately with the fresh lime juice and some sesame seeds.
