Whenever the fridge is looking a little sparse this Potato and Pea curry or Aloo Matar is my absolute go to. It uses up store cupboard essentials such as tinned tomatoes, potatoes and spices along with the old freezer favourite peas to make a warming bowl of curry that everyone loves.
1 tsp yellow mustard seeds
1 tsp of cumin
2 garlic cloves
1/2 tsp chilli powder
1 thumb ginger
1 tbsp ghee or olive oil
6 potatoes quartered
150g frozen peas
1 can tomatoes
Salt and pepper
fry the spices in the oil for a few mins.
Add the potatoes and coat in spices. Season.
Add can of tomatoes and simmer for 30 mins then add the peas
Serce with a squeeze of 🍋, yogurt and coriander 🌱
