Whether you love them or hate them, this Pomegranate & Walnut Brussels Sprout Slaw will definitely have you celebrating the humble sprout this December.
A creamy tahini dressing combined with sweet and crunchy pomegranate seeds and apple make the most perfectly balanced salad that works just as well for a lunchbox as it will for your Christmas table.
Serves 2
Ready in 10 minutes
Good For Christmas
150g of brussel sprouts, thinly sliced
1 apple, thinly sliced
½ pomegranate, deseeded
60g of toasted walnuts
Dressing
2 tbsp of tahini
½ lemon juice
1 tbsp of maple syrup
¼ tsp of cinnamon
1 garlic clove, crushed
Using a mandolin to thinly slice the Brussels sprouts and apple. Mix the dressing together and mix in with the brussels then add the apple, pomegranate and walnuts. Season with salt and enjoy. You can keep refrigerated for two days.
