Pea Pancakes are packed with protein and full of flavour. I love how simple to prepare these savoury pancakes are, most of the ingredients are just blended in a processor. Served with some perfectly bright orange boiled eggs and topped with a drizzle of pesto and herbs to add to the bright and rich green colour and flavour.

Ready in 10 minutes
Good For Brunch, Lunch, Student friendly
1 egg
70g of chickpea flour or other flour
2 spring onion, chopped
salt and pepper
120g of frozen peas
To serve:
2 eggs for boiling to be served with
1 tbsp of pesto
chopped herbs
Blitz the egg, flour, peas, salt and pepper and spring onions for 30 seconds until combined.
Heat a pan with some oil and add 2 tbsp of the mixture to the pan form into a small pancake and fry for 3-4 mins each side until golden and cooked through.
Repeat with the rest of the mixture.
While these are frying boil your eggs and serve t together with pesto and herbs.
