Avocado & Pea toast perfectly paired with a low waste mule cocktail is the perfect way to spend a Summer weekend. Weekends are for good food, good company and GREAT cocktails and that is what this recipe is all about.
I created this recipe with the leftover ingredients I had in the fridge. I never throw away a brown avocado as they still taste great and they are the perfect texture for this recipe. A couple of other tips for this recipe is to slice up your bread and pop it in the freezer so that it keeps for longer and my favourite tip is to put avocado seeds in the freezer and use them as an ice cube, thank me later!
Serves 2
Ready in 10 minutes

½ large leftover avocado or 1 small
200g of frozen peas
1 lemon, zest of half and juice of the whole
Salt and pepper
2 tbsp of pomegranate seeds or toasted sunflower seeds
2 slices of toast
COCKTAIL:
50ml Ketel One Vodka
¼ lime juiced
2 sliced cucumber
200ml ginger beer
Ice
Mash the peas and avocado in a bowl and add lemon zest with a pinch of salt and pepper.
Spread on toast and add the pomegranate seeds.
Pour all of your ingredients into your glass and enjoy!
