Peel the courgettes (discard the green skin or save for later) and chop them into small pieces, blend in the blender with the tahini, garlic, cumin, smoked paprika, salt and lemon juice, once blended add the olive oil and blend again until fully combined.
Pour into a bowl and dip in crudités.
