Sometimes you just need a piece of cake, and this Orange & Polenta Olive Oil Cake can be thrown together in one bowl with no fancy steps and can be glazed and served warm is the perfect way to get your week off to a delicious start.
We might have had a rainy weekend here in London but this cake is a plate of pure sunshine and the orange flavour makes it feel wonderfully christmassy.
Serves 8
Ready in 35 minutes
200g of olive oil or butter, melted
175g of brown sugar
3 eggs
200g of ground almonds
100g of polenta
1 tsp of baking soda
Zest of 1 orange
Juice of 2 oranges
pinch of salt
Glaze
50g of honey
Juice of 1 orange
Zest of 1 orange
Preheat the oven to 170C
Crack the eggs into a bowl and whisk, add in the rest of the ingredients.
Pour the mixture into a greased tin and bake for 30-40 minutes
In the last 10 minutes simmer the honey and orange juice for 7 minutes.
Pour the glaze over the cake and top with orange zest
Serve with yogurt.
