This fragrant nut-free date and cardamom granola is inspired by flavours from the Middle East. You’ll know by now that I don’t believe in eating refined sugars, but this is perfect for anyone with a sweet tooth as the dates and spices give it a burst of natural sweetness. Prepare on a Sunday and enjoy all week long.

Preheat the oven to 140 C.
Mix the date syrup, coconut oil, salt, cardamom ,cinnamon and vanilla together in a bowl.
In another bowl mix the oats, puffed oats, pumpkin seeds and flax seeds together.
Pour the dry mix into the wet mix and stir together well.
Place on a baking paper lined tray and roast for 35 minutes, stirring every 15 until evenly golden and crunchy.
Leave to cool then add the raisins and place in an air tight container for 1 week.
