If you haven’t tried Nasi Goreng then I really recommend this delicious Indonesian recipe. Even though it is packed with aromatic flavours you don’t need too many ingredients and most of them you will probably have in the kitchen already. It is the perfect warming comfort food as we embark on the end of Summer and some cooler weather.
I kept this recipe veggie-based but add chicken or prawns to make it a complete Nasi Goreng.
1 tbsp of sesame oil
3 tbsp of sambal oelek
1 tbsp of garlic paste
1 tbsp of ginger paste
1 red onion finely sliced
1 carrot julienned
150g of cooked brown rice
1 tbsp of tamari
2 spring onions
1 tomato cubed
1/4 cucumber cubed
50g of peas
Start by frying the sesame oil in a large pan. Once hot, add in the sambal oelek, ginger and garlic paste.
After a minute add in the sliced onion, carrot and tamari and mix through for 3 minutes.
Add in the cooked rice and again stir through until fully coated.
Make a small well in the middle and crack an egg into it then scramble and mix it through.
Add in some spring onions for some extra flavour.
Separately, fry an egg for 2 minutes.
To plate up add the rice into a bowl, place on top the chopped cucumber and tomato and the fried egg.
To make it extra spicy top with some sriracha.
