Ingredients
- 500g of carrots
- 1 large yellow onion
- 8 garlic cloves, unpeeled
- salt and pepper
- 2 tbsp sesame oil
- 500ml of water
- 1 can of coconut milk
- 2 tbsp of sweet miso paste
- 1 tsp of tamari
- 1 lime
Toppings: chopped coriander, seeds, nuts and yogurt
Directions
Cut the carrots up into inch chunks, slice the onion into 8th, mix with a little salt and pepper mix with the sesame oil and garlic in a roast pan then pop in the oven for 45 minutes until cooked through.
When cooked place in a pot removing the garlic skin with the coconut milk, miso, tamari and simmer for 10 minutes then blend until smoothe. Squeeze lime juice and serve with chopped herbs, yogurt and seeds.
