I’ve got the perfect Autumn Firework night treat for you! These mini sticky toffee apples are so quick and easy to make, and will be loved by kids and adults alike.
The toffee is totally raw and you’ll never believe it’s made from dates and almond milk! I love these as they are totally free of refined sugar, and will satisfy your sweet tooth. They’re also great because I find regular toffee apples have a small sauce to apple ratio…you never get enough of the toffee, so these mini ones are ideal! You could also make them as a fun canapé to serve with drinks.
Blend the dates, milk, vanilla and salt in a food processor or high speed blender until smooth.
With a melon spoon, scoop out mini balls from the apples. Place them on until sticks and dip into the sauce, spreading with a knife until evenly covered. Place these in the freezer to harden, then repeat with the rest of the mix and keep in the freezer for half an hour, then move to the fridge to serve.
Top with desiccated coconut, toasted hazelnuts or anything you fancy!
