These Marinated BBQ Veggies are perfect if you’re a vegetarian who’s bored of veggie burgers and halloumi or if you’re looking for some amazing accompaniments for the typical meat fare. These recipes can be made on the bbq but also works so well on a griddle pan or oven for a more weeknight friendly version.

Ready in 15 minutes
Good For BBQ
Cut the aubergine into cm rounds and the cauliflower into florets
Mix the marinade ingredients together in separate bowls
Toss the prepared veggies into their marinades and set aside while you heat up the bbq or griddle pan.
Cook for around 5 minutes on each side until they are caramelised and cooked through
