This Maple Glazed Plum Cake is one of my favourite desserts ever. It couldn’t be simpler to make and the plums go so delicious and caramelised, it’s definitely a favourite in my house. I hope you love making this recipe!
175g coconut oil or butter, plus extra for greasing
175g coconut sugar
Grated zest of 1 orange
300g ground almonds
1 tsp baking powder
½ tsp bicarbonate of soda
1 vanilla pod, seeds scraped out
1 tbsp maple syrup
Preheat the oven to 170°C/325°F/gas mark 3.
Cream the coconut oil or butter and sugar together in a food processor.
Add the eggs one by one, mixing well each time, and stir in the orange zest.
In a bowl, mix the ground almonds, baking powder, bicarb and vanilla seeds together. Then pour this into the wet mixture and process.
Mix the plums with the maple syrup
Grease the tin with butter or coconut oil and lay the glazed plums
pour the batter over the top and bake for an hour
