These Lettuce Fish Tacos are such a fun dish to serve and share and tastes so summery and fresh. If fish isn’t your thing this marinade would also taste delicious on roasted chickpeas, grilled mushrooms or tofu.
Serves 2
Ready in 10 minutes
Good For Date night, Dinner Party, Lunch, Student friendly
2 fillets of fish cod or other white fish
1/2 tsp of smoked paprika
1/2 tsp of cumin
1/4 tsp of cayenne
1 tbsp of olive oil
salt
avocado, finely sliced
baby gem lettuce
Mango Salsa
1/2 mango
1/2 a red onion
a handful of coriander
1 lime juiced
2 tomatoes
1/2 jalapeno
Mix the marinade ingredients together and coat the fish, set aside
finely chop the ingredients for the salsa and mix with lime juice, season to taste
Fry the fish pieces until cooked through for around 5 minutes
Assemble each lettuce leaf on a board and fill with avocado, salsa and the fish
