If like me, you love any lemon sweet treats whether it be muffins or pancakes then you will ABSOLUTELY keep coming back to this tasty breakfast dish. I love how quickly pancakes are to make and they can be so versatile with the many flavours and ingredients you can add to the batter and sprinkle on top.
Serves 2
Ready in 10 minutes
Good For Birthday, Brunch, Student friendly
125g of oats
1 tbsp of maple or coconut sugar
1 tsp of baking powder
1 pinch of sea salt
1 lemon zested and juiced
1 egg, beaten
1 tsp of poppy seeds
100ml of oat or almond milk
coconut oil to cook with
Start by blending the oats then add the rest of the ingredients into a bowl and mix well.
Heat some coconut oil or butter in a pan and fry 2 tbsp of the mixture for a few minutes on each side.
Repeat with all the mixture.
Serve with toppings of your choice, I chose yoghurt and berries and a drizzle of peanut butter
