If you have some leftover herbs and you are wanting a quick nutritious and green breakfast then this herby omelette is the one for you. I have been going back to this recipe for as long as I can remember and every time I have it, it instantly gives me joy. Packed full of protein and with an extra zest from our lemon, this recipe gives a refreshing and filling overall taste.
1 tbsp of chopped herbs
1 pinch of lemon zest
pepper and salt
1 handful of frozen peas
Whisk the eggs and add everything in apart from the peas.
Heat the pan with some oil until hot and pour over the eggs.
Then add the peas to one-half of the omelette and cook for 1 minute then fold over and cook until cooked through.
Sprinkle over some extra herbs and dig in.
