The perfect veggie-friendly addition to your plate as a side, or switch out the mini portobello mushrooms for large ones and enjoy as a main
Ready in less than 25-minutes, I hope you love these too.
30g of toasted sunflower seeds
50ml of olive oil
30g of fresh parsley
1 clove of garlic
salt and pepper
½ juice of 1 lemon
2 tbsp of nutritional yeast flakes
Plus, 1 pack of portobello mushrooms for stuffing
Fire up the bbq to get warm as you blitz together the pesto
Add the mushrooms to the BBQ and cook for roughly 3 mins
Then, add a spoonful of the pesto to the inner facing side of the mushrooms, and bbq for another 5-7
Plate up & enjoy!
