I’m totally obsessed with this amazing one pot wonder Harissa Squash & Courgette Tagine. With the colder weather I’m loving having this in the fridge ready to reheat for a deliciously fragrant and spicy meal packed full of nutrients.

Good For Date night, Dinner Party, Girls night in, Lunch, Student friendly
1 white onion, finely chopped
1 tbsp of olive oil
3 tbsp of harissa paste
3 garlic cloves, sliced
1 tsp of dried ground ginger
1 tsp of ground cinnamon
1 tsp ground cumin
6 dates, pitted
4 beef tomatoes, chopped
1/2 squash, cubed
1 courgette, cubed
1 can of chickpeas, drained
500ml of veg stock
served with
lemon juice
couscous, cooked
chopped parsley
pomegranate seeds
Fry the onion and garlic in the olive oil for 5 mins, add the spices and harissa, stir well then add the rest of the ingredients, simmer for 45 mins. Then stir in juice of 1 lemon.
Serve with couscous, parsley and pomegranate seeds.
