This Halloumi Traybake is basically a combination of all my favourite things. This super simple recipe couldn’t be more effortless but delivers so much flavour from the deliciously sweet and juicy roasted vegetables and salty halloumi. Just serve with salad, rice, potatoes or any other grain for the easiest no fuss Mediterranean inspired meal that comes together in minutes

Ready in 35 minutes

1 pack of cherry tomatoes
2 courgettes
2 red onions
2 tbsp of olive oil
2 tbsp of capers
1 tbsp of za’atar
1 pack of halloumi
salt and pepper

Preheat the oven to 200C
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cut the onion into eights, the courgette into inch thick slices and pop on a roasting tray with the cherry tomatoes, sprinkle over olive oil and salt and pepper and roast for 20 mins.

Slice the halloumi into cm slices. Pop on top and sprinkle over the za’atar and capers, roast for another 10, enjoy straight away or pack it away to be eaten cold in a lunch box.
