If you are looking to make more veggie options this Summer then these halloumi skewers are the perfect addition to any barbecue. Between the sweet peaches, salty cheese and crunchy courgettes this may become a staple BBQ dish in your household in no time.
1 courgette, thinly sliced
2 peaches, cut into 8ths (so not too thin)
1 block of halloumi
2 sprigs of rosemary
salt and pepper
Once chopped, skewer the peach, halloumi and courgette.
Heat the BBQ and add olive oil.
Once hot, BBQ the skewers with rosemary, salt and pepper for 5-6 minutes until golden and charred.
