When I saw a version of this Grilled Aubergine with Satay Drizzle recipe on @thefirstmess I knew I had to give it a go, aubergine and a creamy peanut sauce is just the dream combination. This makes such a delicious side to bring to a BBQ or picnic or to serve with soba noodles and crunchy julienned vegetables for a delicious asian inspired bowl.

3 aubergines, cm sliced
2 tbsp of sesame oil
salt
satay sauce
3 tbsp of smooth peanut butter
4 tbsp of coconut milk
juice of 1/2 a lime
1 tbsp of honey
1 tbsp of curry powder
1 tbsp of tamari
coriander to serve
Preheat the oven to 200C.
Rub the aubergine in the sesame oil and salt. Place on two roasting tray and bake for 30 minutes, then turn the oven to grill for the last 10 mins.
Mix the satay sauce together. Drizzle over the aubergine and top with coriander to serve.
