This Green Goodness Gazpacho is such a vibrant dish and is so delicious and deceptively simple to create. It looks like a total showstopper for a summer dinner party or when you feel like making your lunch a little fancy and packs loads of amazing nutrients so is sure to have you glowing inside out.
Serves 2
Ready in 5 minutes
Good For Date night, Dinner Party, Drinks Party, Galentine’s, Lunch, Student friendly, Valentines
1 avocado
1/2 cucumber
1 spring onion
A handful of fresh basil
A handful of fresh mint
50g spinach
1/2 a chilli
1 clove of garlic
5tbsp yogurt (I used coconut)
a splash of apple cider vinegar
salt to taste
Roughly chop your vegetables
Place your chopped vegetables in the blender with the remainder of ingredients
Blend and check seasoning
Serve in a bowl with optional garnish of seeds, chilli, herbs and olive oil.
