This gorgeous green detox salad is bursting with green goodness. Whether you’re feeling run down, or even just looking to pack in some extra goodness this is a great warm salad to munch on. I love using Edamame in a salad, and the asian inspired dressing mixed with black sesame seeds really gives it a kick of flavour!

Good For Picnic
Cut the sweet potato into small chunks. Heat the coconut oil in a small pan. Add the sweet potato with a pinch of salt and sauté for 15 minutes until cooked through.
While this is cooking chop up the broccoli into small pieces and steam for 4 minutes until just cooked through.
Mix the tahini, ginger, lime juice and a tbsp. of water together. Stir well and add a pinch of salt and pepper then leave to the side.
Finely chop the kale. Add the kale, edamame beans, steamed broccoli and sesame seeds to the sweet potato once it is cooked through and sauté with a pinch of salt.
Plate and drizzle over the dressing and throw in the pumpkin seeds.
