I absolutely love these greek potatoes, they are a perfect snack to enjoy in the afternoon when you are looking for something more substantial. I dip mine into tzatziki or serve as a side.
As they are cooked slowly in a lemony garlic flavour they absorb so much flavour by the time they are cooked they are soft and fluffy on the inside with a delicious crispy texture and abundant with flavour.
5 large potatoes
3 tbsps of olive oil
1 tsp of oregano
2 lemons zested and juiced
8 garlic cloves
1 tsp of salt
freshly cracked pepper
Preheat the oven to 180C fan.
Slice the potatoes into wedges and coat them with the seasonings.
Cover the potatoes with foil and then bake for 1 hour.
After an hour remove the foil and bake for another 30 – 45 minutes until golden and crispy.
Then dig in and serve how you wish.
