Preheat the oven to 220C.
Get a muffin tin and place a tsp of avocado oil in 9 compartments. Place in the oven to heat up for 15 minutes.
Beat the eggs, flour and milk with a big pinch of salt and pepper. Whisk until smooth.
Remove the tray from the oven and pour the batter evenly into the muffin compartments.
Place in the oven for 15 minutes until golden and risen.
Serve with your favourite roast and veggies!
