Shop bought muesli can often be packed with sugar, so I always think it’s a healthier and tastier option to make your own! Get the glow with my gluten free muesli, bursting full of energy boosting superfoods.
The dried goji berries and apple mixed with the energy rich oats will keep you going all morning. I’ve added cinnamon to this delicious breakfast recipe as it helps to stabilise your blood sugar levels – plus it’s such a delicious spice that packs that extra flavour at any time of the year.
I love making a batch of this at the weekending and enjoying all week long. It’s also a super simple dish to take out on the go.
Preheat the oven to 180 C.
Mix the oats, coconut flakes and pumpkin seeds together with the cinnamon, vanilla and coconut oil. Spread out over 2 large roasting trays and roast in the oven for 20 minutes until golden.
Let them cool then mix with the rest of the ingredients in a small container. Serve 1 cup with your choice of plant based milk and fresh fruit like figs and berries.
