Gingerbread is a childhood favourite of mine. Ginger helps with digestion so will not leave you feeling bloated, and the fiery root helps soothe a winter cold! Shay and I love to get creative and get specific holiday cookie cutters and decorate cookies according to the holiday. It’s a great way to get into the holiday spirit.

Ready in 45 minutes
Good For Afternoon Tea, Christmas, Girls night in, Movie night
175g gluten-free flour (I used Dove’s Farm)
1 tbsp ground ginger
1 tsp mixed spice
1/2 tsp baking soda
1/4 tsp of sea salt
75g brown or coconut sugar
80g of butter or coconut oil
2 tbsp maple
1-2 tbsp of water
Start by mixing all of the dry ingredients in a bowl and add the butter, maple and water and mix to combine.
Once in a dough form store for 30 mins in the fridge.
Flour the surface and roll out the dough and use your cookie cutters to cut the shapes.
Preheat the oven to 180C for 12-14 mins. Once cooked leave to cool and decorate how you like.
