If you love ginger then you will absolutely love snacking on these ginger crunch bars. These bars will have you getting up every 10 minutes to grab another one. A chewy and oaty base topped with a sweet and spicy ginger icing – the perfect treat.
200g of coconut butter or oil
100g of brown rice syrup or honey
2 tbsp of almond butter
2 tsp of ground ginger
1 tsp of vanilla essence
200g of dates
70g of ground almonds
50g of desiccated coconut
70g of oats
Firstly put all of the base ingredients in a food processor and blitz for 1 minute.
Line a baking tray and push down the base evenly.
On a low heat melt the topping ingredients.
Once combined, pour the toppings on top of the base and freeze for an hour.
Cut up and store in the fridge.
