I did a fridge raid today for lunch which I love to do a couple of times a week as it’s so good for reducing food waste. I roasted up some veggies in oil and salt with brown rice and a green goddess dressing. Some other great fridge raid lunches are frittatas or sometimes I’ll freeze veg and fruit and make it into smoothies at a later date. What are your go to fridge raid recipes?
2 tbsp of yogurt
1/2 lemon juiced
1 tbsp of freshly chopped dill
1 tbsp of freshly chopped parsley
Pepper and salt
Add all of the ingredients into the blender and blitz until smooth.
