It’s all about the marinade and cabbage slaw that elevates this recipe. The deliciously spiced cod with the crunch of the fresh slaw together makes for the most delicious bite. Every time I make this recipe I wish I made more, they are too good! Why not make these at your next BBQ?
1 tsp of cumin
1 tsp of cayenne
1 tsp of smoked paprika
salt and paper
2 fillets of cod
4-6 small tortilla wraps
1/8th of red cabbage, thinly sliced
100g of corn kernels
1 avocado, sliced
1 jalapeno, finely chopped
10g of chopped coriander
Rub the cod in the cumin, cayenne, smoked paprika, salt and pepper.
Heat 1 tbsp of olive oil in a pan and fry the fish for 4 mins each side until cooked through then flake.
Thinly slice the red cabbage, and mix in a bowl with the avocado, corn and fresh lime.
Warm the tortillas in a pan then top with the veg, yoghurt, cod, coriander and jalapenos.
