Mix up your usual healthy fish and chip recipe with fish burgers and celeriac chips.
Celeriac is one of those weird looking veggies you see in the supermarket that you never buy because you don’t know how to cook. Let me tell you – they’re totally delicious and you can simply roast them in the oven for a tasty alternative to sweet potato chips!

Preheat the oven to 200 C.
Peel the celeriac and cut into chip like shapes and place in a roasting tray . Pour over 2 tbsp of oil, a big pinch of salt and the garlic cloves. Massage the celeriac in the oil and salt so it is evenly covered then place in the oven to roast for 35-40 minutes until they are cooked through .
While this is cooking, in a food processor blend the cod (make sure the skin is off) with the mustard, dill and a pinch of salt and pepper. Process until the fish is minced and mixed well with the spices. Roll into 4-6 small patties and leave to the side.
Just before the celeriac chips are done heat the remaining avocado oil in a pan and on a medium heat. Sear the fish burgers for 3 minutes on each side until cooked through. Serve with the chips.
My food philosophy is all about enlivening the hottest, happiest and healthiest you. It’s about keeping things simple and delicious so you don’t feel bored or deprived.
