During the colder month’s it’s always nice to have delicious and quick soup recipes on hand to whizz up in your blender and take to work! This detox Coconut and Broccoli soup is creamy, packs in the green nutrients and has an added kick from a spicy chilli.
Coconut milk is such a delicious soup ingredient, it gives a great coconut punch and makes the texture creamy without adding dairy!

Good For Dinner Party
Finely chop the onion and red chilli. Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 5 minutes until golden. Add the garlic, ginger, chilli and sautée for 2 minutes.
While this is cooking, chop up the broccoli then throw it in with the onion mix. Stir for 30 seconds with a pinch of salt then pour over the coconut milk and veggie stock. Simmer for 20 minutes then blend until smooth.
Top with fresh herbs, nuts and seeds for added omega goodness!
