Deluxe Whole Baked Salmon with Clementines, Olives and Fennel. Topped With Lemon Parsley Gremolata! If this doesn’t knock the socks of your friends and family this Christmas I don’t know what will…. The best part is, it’s a one tray bake, which means little washing up, no juggling of pans and you can carry on entertaining your guests while it cooks.

200g of new potatoes, halved
2 red onion, quartered
2 tbsp of olive oil
1 side of salmon
150g of olives
4 garlic cloves
4 clementines, peeled and halved
50g of almonds
Salt and pepper
50g of parsley, finely chopped
1 lemon, 1/2 zest and all juice
2 crushed garlic cloves
Preheat the oven to 200C. Place the potatoes, onions and olive oil in a large roasting tray, mix well and then pop into the oven and cook for 35 minutes.
Take them out and add the salmon, clementines and olives and season with salt and pepper. Roast for 15 minutes – meanwhile pour yourself a glass of wine!
Mix the gremolata ingredients!
Finish off with lemon juice, pomegranates and almonds.
