Date and Pistachio Cupcakes

I love orange with pistachio, it reminds me of baklava. These cupcakes are so delicious and I just know you will love them.

Mine are a little wonky because my cupcakes cups were a little thin and didn’t hold their shape but I think it looks nice and rustic, you can make yours more pristine!

They’re so simple to make and scrumptious to eat.

I used ground almonds instead of flour so they are gluten free and nice and nutty. The orange boost your body with some vitamin C and the almonds supply skin glowing vitamin E.

I love the dates in this dish too, giving the cakes a healthy caramel taste. These bad boys will keep for a few days in an airtight container.

  1. Preheat oven to 180 C.
  2. Grease 8 paper cupcake holders.
  3. Zest 2 oranges and juice one.
  4. Mix in a bowl the ground almonds, baking soda, salt and orange zest.
  5. In a food processor mix the sugar/honey with the oil/butter, then slowly add in the eggs one by one, then the orange juice.
  6. Poor this on top of the ground almonds and mix well together. Chop up the dates into small pieces and add this with the pistachios into the mix and stir through.
  7. Poor the batter into the cupcake holders and bake for 18-20 minutes.
