What could be better than a Crispy Tofu Almond Butter Bowl with a creamy, aromatic almond butter dressing, and the best part of all is that it could be on the table in front of you in the next 20 minutes so what are you waiting for?
In all seriousness you could drizzle this sauce onto pretty much anything and it would taste delicious, this is truly the perfect base recipe for a delicious bowl that is not only super simple but also totally delicious and satisfying.
1 pack of tofu, cubed
salt and pepper
2 tbsp almond butter
1 tbsp tamari
1 tbsp sesame oil
1/2 lime juiced
1 tsp of minced garlic
1 tsp minced ginger
1 tbsp honey
1 head of broccoli, steamed
100g of rice, cooked
Cook the rice according to package instructions
Heat a pan with some sesame oil
Chop the tofu into cm cubes and dry any excess liquid with a kitchen towel
add the tofu to the pan, season with salt and pepper and fry until golden brown.
While the tofu is cooking steam the broccoli and mix together the dressing ingredients
Plate the rice, and top with the broccoli, tofu and almond butter dressing and finish with spring onion, chili, sesame seeds and coriander.
