Coconut Infused, Creamy Tray Baked Salmon! I literally used everything I had left and put it in a pot, and it turned out to be magical!! My family were so impressed. We actually also popped leftovers in a pot and will have it for lunch tomorrow with some sourdough bread. Enjoy! Xx

Ready in 30 minutes
Good For Dinner Party, Girls night in, Lunch, Student friendly
4 salmon fillets (@leapwildsalmon)
1 can of coconut milk (@bionaorganic)
50g sundries tomatoes
50g if spinach
1 red onion, sliced
2 crushed garlic cloves
1 tsp of mustard seeds (yellow)
4 sprigs of thyme
1 tsp of olive oil
Place the oil and onion in a large pan, fry for 5 mins. Add the garlic fry for 1 min.
Pour in the coconut milk, the spinach, salmon fillets and is dried tomatoes. Top the salmon with the mustard and thyme. Stir a little so the spinach wilts.
Bring to a simmer and cook for 10-15 mins until cooked through. Season and serve.
