These Creamy Peanut Butter Noodles are the best ever. Lunch on the table in less than 15 minutes packed full of plant protein and creamy deliciousness from the peanut butter and they are healthier, quicker and cheaper than take out 😍

1tbsp sesame oil
2 spring onions
1/2 red chilli thinly sliced
2 garlic cloves finely chopped
150g mushrooms, sliced
1 heaped tbsp smooth peanut butter
1 tbsp soy sauce or tamari
2 tbsp water
150g Rice noodles
1 tsp Sesame seeds
Precook the noodles as per pack instruction
Fry the garlic, spring onion and chilli in sesame oil for one minute
Add in the sliced mushrooms and fry for 7 minutes
Add in the peanut butter, tamari or soy sauce and water and stir to create a creamy sauce
Stir through the cooked noodles and cook for a minute to coat
Serve altogether with a sprinkle of sesame on top
