Even though we can’t get out to our favourite brunch spots you can still recreate the experience at home with these delicious Corn Fritters with Smashed Avocado. These freeze really well so why not double the recipe and enjoy them throughout the week.
If you’re missing any ingredients you could swap the chickpea flour for any other flour, the egg for a chia or flax egg, the corn for frozen peas and any of the herbs and spices for whatever you have.
Serves 2
Ready in 10 minutes
Good For Brunch, Lunch, Picnic, Side, Student friendly
2 cobs of corn, kernels removed or 1.5 cups of frozen corn or 340g tinned corn
4 tbsp of chickpea flour
1 spring onion
1/4 red chilli
1 tsp of smoked paprika
1 tsp of cumin
1 garlic clove
1 tbsp of chopped coriander or parsley
1 egg
salt and pepper
1 avocado
juice of 1/2 a lime
1 spring onion finely chopped
salt
blend the fritter ingredients until combined but a little chunky
heat a pan with olive oil and add a tbsp of the fritter batter
Fry for 2 mins until golden then flip and cook for another minute or two
mix the avocado ingredients together with a fork, mashing to your preferred consistency
serve together with fresh lime juice
