I love having healthy snacks ready to go – it’s my secret weapon that protects me from junk food cravings when I fancy something sweet. My Coconut, Apricot and Oat Bars are the perfect compliment to a nice cup of tea in the afternoon, and I think they’re delicious for breakfast too.
What’s more, they’re vegan and loaded with coconut and dried apricots which are both fantastic for glowy skin – these beautiful snack bars are the gift that keeps on giving!.
· Blend the coconut oil, apricots, cinnamon and vanilla together for 30 seconds. Add the oats and desiccated coconut and pulse a few times until combined – but be careful not to blitz so long that the oats lose their texture.
· Grease a baking tray with coconut oil and fill it with the oaty mixture, pressing it down with your fingers. Pop it in the freezer for 30 mins, then cut into bars. These yummy snacks should last up to five days in an airtight tin, but they’re so moreish you may find they disappear quicker than that!
