These cookies are the dream. Chocolatey, crunchy and super tasty.
I love how the final touch of the zest of the orange brings these cookies to life.
The vitamin e rich almonds give the cookies a crunch but it could work with another nut or coconut flakes (if you are allergic).
Coconut sugar sweetens these babies. If you haven’t yet used this low GI sweetener, you are about to fall in love. Made from the sap of the plant, they give these cookies a nice caramel like taste.
They are super dreamy!
Set your oven to 170 degrees.
In a food processor cream your sugar and butter/coconut oil, then place them in a bowl. Beat your egg in a separate bowl, then add them in with the creamed butter and sugar, mix gently. Slowly add in the flour a little at a time and mix in with a spoon.
Lastly add in the salt, baking powder, raw cacao and almonds and mix well.
Roll into small balls and place on a baking tray lined with baking paper, then slightly flatten each ball out into a cookie shape.
Bake for 8 minutes, let them cool for 10 minutes then enjoy. Top with orange zest before you dig in.
