This Chocolate Cherry Baked Porridge has got to be one of my favourite breakfasts ever, it literally tastes like cake and is the perfect vessel for packing on delicious toppings like coconut yogurt, nut butter, granola, fruit etc. It has become another food trend not to be missed.
This recipe uses cacao powder and frozen cherries to create a super chocolatey breakfast that is still packed with polyphenols and fibre for the perfect way to start your day.
Serves 1
Ready in 30 minutes
Good For Brunch, Easter, Student friendly
65g of oats
200ml oat milk
1 tbsp chia seeds
1 tbsp cacao powder
1 tbsp nut butter
50g of frozen cherries
Preheat the oven to 190 C.
In a mixing bowl or jug mix all the ingredients apart from the cherries.
Leave the mixture to thicken for 5 minutes before stirring well and adding to a small baking dish.
Fold through the cherries and then bake for 20 mins, after this time the porridge should be crispy on top but a little gooey inside, if you want it cooked more you can leave it for another 5-10 minutes.
To serve, I’ve topped mine with extra fruit and some coconut yogurt.
