These Chocolate Avocado Blender Brownies are the ultimate simple recipe for when you want the fudgiest brownies fast. It honestly couldn’t be simpler, just prepare your ingredients, blend and bake. With the addition of avocado and cacao to the mix these brownies are also a pretty nutritious treat, full of healthy fats, magnesium and antioxidants. They should keep for a few days in the fridge but I’ll bet they wont last that long! Enjoy xx
1 large avocado
1/4 cup of coconut oil
1/2 cup of spelt flour or gf flour
1/2 cup of cacao powder
2 eggs or chia eggs
1/2 cup of maple syrup
big pinch of salt
1 tsp of bicarb soda
Preheat the oven to 175C
Prepare your ingredients for the blender by mashing up the avocado and measuring the remaining ingredients.
If mixing by hand, ensure the avocado is well mashed before adding the other ingredients to avoid lumps and ensure a smooth batter
Blend or mix the ingredients throughly until smooth
Place in a 20cm by 20cm roasting tray lined with baking paper.
Bake for 20 mins
Allow to cool completely before slicing
