These delicious crispy and chewy Chocolate Almond Butter Cookies make the perfect gift for those you love this Christmas. I’m all about reducing waste with homemade presents this Christmas and I can guarantee if you make these cookies none of them will be wasted! Feel free to swap the almond butter for whichever nut butter is your favourite.

150g almond butter (at room temperature)
1 egg
100g coconut oil (melted)
100g coconut or brown sugar
1 tsp baking powder
1 tsp vanilla extract
to dip:
50g dark chocolate
2 tbsp desicated coconut
preheat the oven to 180C
in a bowl whisk the egg and mix in the almond butter
add in the sugar and stir to combine
fold through the melted coconut oil and finally the baking powder and vanilla
spoon onto a lined baking sheet and bake for around 10 – 15 minutes
place the cookies on a wire rack to cool while you melt the dark chocolate
dip the cookies in the melted dark chocolate and sprinkle with coconut
