I’m so excited to share my Chickpeas, green beans, broccoli and pesto bowl with you! It’s so so easy to make – foolproof in fact – and can be made in 10 minutes flat.
If you’re short on time, whack this together in the evening for dinner and pop the rest in your tupperware and take to work the next day. It’s also a great sharing side dish that can be devoured with anything like salmon, chicken or if you’re vegetarian or vegan, cauliflower steaks or a baked sweet potato.
Ready in 10 minutes
Drain the can of chickpeas and place in a pot with the vegetable stock
And lemon juice, bring to a simmer while you prep the veg.
Chop the broccoli into bite size chunks. Top and tail the green beans. Chop in half and place them both in the pot with the chickpeas. Let this cook for 5 minutes.
While this is cooking make the pesto by blending all the ingredients except the olive oil together, when its smooth, slowly drizzle in the olive oil while the blender is still going until smooth.
Check on the veg and see if they have cooked through and some of the liquid has evaporated (about half).
Serve the veg with the pesto drizzled over.
