This Chickpea, Pepper and Swiss Chard Stew is such an easy way to boost the veggies in your diet and reduce food waste by clearing out the fridge and using whatever you have. The base recipe works perfectly with whatever you have on hand, and is such a simple and nourishing meal. Enjoy!

1 onion chopped
1 leek chopped
1 inch grated ginger
2 cloves garlic chopped
1 chopped red chilli
1 tin of chickpeas drained and rinsed
200g chopped leafy greens of choice (I used Swiss chard)
1 red pepper chopped
500g passata
500ml vegetable stock
1 tbsp olive oil
To a hot pan add olive oil, followed by the onion and leek, saute for a few minutes and add in the garlic, chilli and ginger.
Next add the pepper and chickpeas to the pan and cook for a few minutes
Pour in the passata and stock and simmer for 20 minutes
Turn the heat off and add in the greens, stir for a few minutes until they wilt
