If you are hosting a dinner party soon or looking for a low maintenance weeknight family recipe, a one-pot dish like this chicken traybake is a wonderful option for both. It’s all about simplicity and it doesn’t get much simpler than this Traybake. Simple doesn’t have to mean boring, this recipe is packed with flavour. If you don’t eat chicken you can swap it out for extra butterbeans, chickpeas or tofu.
6 chicken thighs skin on
200ml of stock
1 can of chopped tomatoes
1 pack of green olives
2 large or 4 small red onions, thinly sliced
4 garlic cloves, whole skin off
2 lemons, cut into
200g of cherry tomatoes
salt and pepper
1 tsp of smoked paprika
1 tsp of dried thyme
1 can of butter beans, rinsed
Preheat the oven to a 190C fan (with grill at the top if you have this function).
Add everything into a tray and stir well, keep the chicken skin up and season the skin with salt.
Put the tray in the oven for 45 minutes, for the first 25 minutes put it on the bottom shelf then move to the top to help crisp the top.
This is a one-pot dish so you only need to serve this.
